About In Between Octaves Japanese Ramen House
This is a design project that integrates oriental elements into a westernized shopping mall. The overall space color system is mainly white and wood grain. An array of hand written calligraphy lanterns is used to frame the outer kitchen and dining areas like a musical score. The ramen chefs cook with the spirit of Isshokenmei. From the moment they queue up to the end of their meal, the guests all show their love for ramen and Tsukemen, just like a beautiful melody resounding in the space. Notes continuously perform the contemporary Japanese space with sound tracks between the spatial scores.
Che Yung Kung's design for In Between Octaves Japanese Ramen House engages the enduring challenge of translating cultural culinary traditions into contemporary spatial experience, demonstrating how thoughtful architectural intervention can honor heritage while serving present-day hospitality functions within commercial contexts, the work participates in the rich lineage of Japanese spatial design principles that privilege material authenticity, structural clarity, and the careful calibration of scale to human dimension, traditions that extend from historical machiya townhouse construction through the refined aesthetics of sukiya-zukuri residential architecture and the craft-oriented modernism of mid-twentieth-century practitioners who sought synthesis between inherited wisdom and contemporary needs, the compositional achievement evident in this environment rests upon the designer's sophisticated orchestration of horizontal and vertical elements into a cohesive architectural grammar, where the rhythmic spacing of timber columns establishes measured intervals across the dining floor while the layered horizontal planes of counter, lighting canopy, and overhead pergola structure create distinct spatial zones that guide movement and focus attention without imposing rigid boundaries, this openness within structure reflects the Japanese concept of ma, the meaningful interval or negative space that becomes as important as built form itself, allowing the architecture to breathe and providing visual rest that heightens appreciation of material and detail, the chromatic restraint demonstrates notable discipline, restricting the palette to warm timber tones, creamy ceramic, and punctuations of white and black, a limited range that creates visual coherence while allowing subtle variations in wood grain, surface texture, and light quality to register with heightened clarity, this approach exemplifies the aesthetic philosophy of wabi-sabi, finding beauty in natural material character, modest means, and the honest expression of structure and craft rather than applied ornament or surface decoration, the technical execution reveals accomplished detailing, from the precise joinery visible in the timber framework to the careful alignment of tile work and the integration of lighting elements within the architectural system, passages of particular refinement include the suspended lantern installation that transforms functional illumination into poetic presence, the characters inscribed on each lantern adding layers of meaning while the collective rhythm of circular forms creates visual syncopation against the rectilinear geometry, the shadow play between illuminated foreground and mysterious darkened background demonstrates sophisticated understanding of how light and shadow can expand perceived space and create atmospheric depth, thematically, the environment explores the intersection of tradition and contemporary life, asking how cultural heritage can remain vital and relevant within modern commercial contexts, the design suggests that honoring tradition need not mean nostalgic reproduction but rather can involve distilling essential principles and translating them through contemporary materials and spatial organizations, the open preparation counter positions culinary process as performative ritual, inviting diners to witness the care and skill involved in traditional ramen preparation, this transparency between kitchen and dining room challenges Western conventions of back-of-house concealment while aligning with Japanese culinary traditions that celebrate the craftsmanship of food preparation, the overall environment creates what might be understood as a threshold space, simultaneously evoking the intimate scale of traditional Japanese dining while accommodating the functional requirements and social patterns of contemporary urban restaurant culture, one might observe in this work a meditation on authenticity and adaptation, the space neither attempting to recreate a specific historical precedent nor abandoning cultural specificity in favor of generic contemporary styling, instead the design achieves a nuanced balance, employing recognizable elements of Japanese spatial tradition, timber construction vocabulary, lantern lighting, low seating arrangements, while composing these elements into an environment that feels genuinely contemporary rather than retrospective, viewers might consider how the space positions them as participants in an ongoing cultural conversation, where the act of dining becomes an opportunity to experience dimensions of Japanese aesthetic philosophy and culinary tradition, even as the environment acknowledges and serves the rhythms of present-day urban life, the careful attention to proportion, material, light, and spatial sequence suggests that everyday commercial environments can serve as vehicles for cultural transmission and aesthetic education, that the places where we gather for nourishment can offer more than functional accommodation, potentially becoming settings for contemplation, connection, and the quiet appreciation of craft and care made visible through thoughtful design.

- Unique Properties
- In a westernized shopping mall, we incorporate oriental elements into the space.
Through architectural manipulation technique, a grid sequence is created where the central axis runs through the space, creating a relationship between the new and old parallel axes. An array of hand-written calligraphy lanterns is used to frame the outer kitchen and dining areas like a musical score.

- We made the following attempts to visualize the spatial atmosphere we want to convey:
1. Open kitchen bar with sliding window
2. Wooden trusses with atmospheric lighting
3. Stainless steel square expanded mesh to add details to the truss facade
4. Facade metal grille and wooden grille
5. Long wall tiles extend against textured white wallpaper
6. Long linear wall washer
7. Handwritten Japanese calligraphy lantern
8. The looming floor-to-ceiling glass
9. Brand logo styling lamp with clear details - Design Challenge
- We must complete the construction within 45 days to catch up with the Christmas events in the area where the restaurant is located.
- Project Duration
- The project was designed in October 2022.
The project began construction in November 2022.
The restaurant had a trial operation in December 2022.
The restaurant officially opened in January 2023 in New Taipei City, Taiwan. - Operation Flow
- When customers enter the store, you can observe the ramen chef's preparation process due to the open kitchen. The sound of the ramen chef shaking the noodles and his spirited shouting make people look forward to the ramen being served.
The inner and outer kitchens form an O-shaped circulation line through two food delivery ports, allowing for smooth execution of food preparation, soup making, meal delivery, recycling, and cleaning. - Research
- The ramen shop owner insists on using natural ingredients such as pork bones to cook the secret soup every week, in order to let gourmets taste the delicious soup.
The owner told us, when we think back to eating ramen in Japan, we remember how lucky we were to get seats at the counter. The way they shook the noodles, accompanied by their spirited shouts, made us even more excited for the ramen to be served.
How to make this space reflect the focused spirit of ramen chef is our goal. - Inspiration

We are doing space design works, and we have not seen any other plagiarized works.
And we do not intend to produce my works ourselves
