About Ebisu Taigh-Bìdh Iapanach

Tha faireachdainn aoigheil ann agus tha sealladh cruinne Washoku air a neartachadh nas motha leis a’ ghàrradh Iapanach a tha làn de phlanntaichean is fhlùraichean ràitheil, agus an taobh a-staigh air a sgeadachadh le stuthan traidiseanta Iapanach a tha a’ cruthachadh faireachdainn sònraichte Iapanach. Ann an àite cuibhrichte, tha e air a dhealbhadh gu h-èifeachdach gun sgudal. Is e an rud as cudromaiche den àite seo an raon far a bheil na suidheachain aig àirde a’ chunntair, a tha a’ coimhead thairis air uinneag mhòr. Bidh an t-àite gu bhith na aon le gàrradh Iapanach taobh a-muigh na h-uinneige a tha an uair sin a’ cruthachadh èadhar fosgailte.

Unique Properties
The concept of the project is WASHOKU is to create a space to further emphasize its world view. Here, Japanese dishes which use seasonal ingredients from the mountains, sea, and rivers of Japan and handpicked local sake are offered. Guests can enjoy the world of WASHOKU through the Japanese garden which is full of seasonal plants and flowers as well as a waterfall, and an interior with traditional Japanese materials.

Production Technology
A lot of Japanese traditional handmade materials are used for interiors. As they are handmade, each material is slightly different which will stimulate curiosity. The materials that are used are as follows.

Ceiling : plasterer , natural reeds , woven fabrics , square timber
/ Wall : tile , Japanese paper , plasterer
/ Floor : tile , gravel , wood floor board
Design Challenge
In a limited space, it is designed efficiently without waste.
The place mainly consists of a Japanese garden, three spacious guest areas (including counter height seats, semi-private rooms, and private rooms), a bar corner, a back yard and a staff room. The highlight of this space is the area where the counter height seats are, which overlooks a large window. The space becomes one with the Japanese garden outside the window which in turn creates an air of openness.
Research
Not only foreign tourists, but also Japanese people regardless of age have visited this place and indicated interest to Japanese traditional culture. Not only overseas visitors, but also modern Japanese people are having less opportunity experiencing traditional Japanese cuisine and atmosphere. Thus, this is a valuable place which is helping to protect, pass down, and develop Japanese traditional culture.
Inspiration
A Japanese restaurant which offers traditional Japanese dishes called "WASHOKU". WASHOKU is traditional Japanese culinary culture, registered as a UNESCO Intangible Cultural Heritage. WASHOKU is a social custom of Japan which is based on the spirit of respecting nature. This place communicates the proud culinary culture of Japan to foreign tourists and the Japanese. It also acts as a place to pass this on to future generations.
Project Duration
Project Duration: From November 2018 to January 2019
Project location : Osaka(Japan)
Operation Flow
It is far removed from the bustle of city life and it is very quiet. The Japanese garden which has stones piled up on the wall are like that of a castle wall, plenty of seasonal plants and flowers, and a waterfall cascading down are following a traditional style. Japanese traditional materials are used everywhere in the interior, and in addition to the WASHOKU, guests will be able to more broadly and deeply understand the Japanese traditional culture by being in such an atmosphere.
